Monday Motivation: Healthy Meatball Sub (Yes, Really!)

Do you like to cook? It’s a struggle for me at times; my tendencies are to be repetitive with foods, or make things quick and easy. So my health goals include seeking out a new, healthy recipe each week.

Here is one that caught my attention, straight from the Fixate cookbook. For 21 Day Fix or Insanity Max:30 friends, that’s 2 Greens / 1 yellow / 1 red / 1 purple / 1/2 tsp

INGREDIENTS:
1/2 sprouted whole-grain roll
1 serving Italian meatballs, warm
1/4 cup tomato sauce, warm
2 tbsp. shredded mozzarella cheese
2 tbsp. shredded Parmesan cheese
2 tbsp. chopped fresh flat leaf (Italian) parsley

DIRECTIONS:
Pre-heat over to 400 degrees F
Wrap bottom of roll with aluminum foil, leaving top exposed
Top roll with Italian Meatballs
Top evenly with tomato sauce and cheeses
Bake for 8 to 10 minutes, or until cheese is melted and bubbly
Sprinkle with parsley and enjoy!
