The paleta. A summer time treat that Latino kids, all over the globe, enjoy on hot summer days after wasting their hours running in sprinklers or playing in pools. Here, we call them ice pops, or popsicles, but in Mexico, paletas are icy mixtures of fruit juices and, usually, are chock-full of chunks of fruit. Typical flavors include watermelon, lime, guanábana, mango, coconut, rum with raisins, pineapple with chili powder, cucumber with chili powder, pecan, pistachio or tamarind. And often, they’re covered with chocolate or nuts.
Nowadays, you can find paleta recipes with any number of flavor combinations. Some are just icy versions, while others use a variety of milks, creams and yogurts.
Super Simple Strawberry Yogurt Paletas
My kids often enjoy a midday yogurt snack, but since the days have been hot, we’ve been experimenting with popsicle creations. This super simple Strawberry Yogurt Paletas recipe is as quick as it gets, yet still provides the health benefits of yogurt and fruit.
1/2 cup strawberries
1/2 cup blueberries
1 tablespoon stevia, a sugar substitute
1 cup plain Greek yogurt
1 teaspoon vanilla
Gently fold the fruit, stevia and vanilla into the yogurt. Fill popsicle molds to the top and freeze until firm. You’ve got a summer treat that will satisfy most any kids!
